
Caplansky, the owner of Caplansky’s Delicatessen, has announced on his blog that he won’t be serving any smoked meat for a week. “I am a victim of my own excess. Or lack of excess.” is what he says about his meat stock. Caplansky has decided to wait for his smoked meat to properly cure for “about a week”.
